Receive Text UpdatesMy signature dish is my white chocolate mousse. I love the simplicity and versatility of it, but to be more specific, I'm featuring my white chocolate lavender mousse, served with a honey piñon brittle. It's a springtime favorite that is a subtly sweet ending to a meal without being too heavy. I love to feature the locally produced culinary lavender and the piñon (pine nuts) that are both staples to central New Mexican cuisine.
Who is your culinary inspiration?While it's hard not to be inspired by the indigenous and Hispanic roots of the area, I am inspired by my family. Both of my parents were great cooks, despite working full time jobs. My dad was the oldest of seven, and lost his father as a teenager. By default he became the house cook while my grandma worked as a nurse. My mom had a different background in a typical early 60's middle class home. She learned all of her mom's recipes that were typical of the time. Both taught me to be adventurous.
What would you do with the $25,000?With $25,000, I would put it towards furthering my culinary and hospitality education goals.
