One of my favorite entrees to make for an occasion is smoked prime rib with creamed greens and fondant potatoes. My favorite dish from our food truck menu is our Boujie Bahn Mi: a less-than-traditional sandwich made with 5-spice marinated and smoked pork loin, rice wine pickled veggies, shaved jalapeños, and miso mayo, all on a French Bahn Mi roll.
Who is your culinary inspiration?I have drawn inspiration from all over. Starting as a teen, watching Paula Dean and Emeril. And studying Iron Chef and Iron Chef America in my 20s. Then as I grew my career in restaurants, I began taking inspiration from everything around me. Food I eat. Places I go. People I meet. And of course there are some chefs I follow closely; Tom Colicchio and his Top Chef alumni are among them.
What would you do with the $25,000?I would invest the $25,000 back into Beezer Eats! to expand our catering abilities.
