It looks simple, but it carries my entire philosophy as a chef: turning humble ingredients into something unforgettable. I grew up in Eastern Europe where luxury didn’t exist, so I learned early that emotion matters more than expensive products. The sweetness of the pumpkin, the depth of the miso, the earthiness of the truffle, it’s comfort and fine dining at the same time.
Who is your culinary inspiration?Anthony Bourdain inspired me the most. Not because of recipes, but because he showed that food is really about people, culture, struggle, and truth. I’ve worked from luxury kitchens in Scandinavia to remote villages in Bulgaria, and I learned that the most powerful meals are not always the most expensive ones. My biggest inspiration also comes from my own life: traveling, failing, rebuilding, becoming a father, and starting over again and again.
What would you do with the $25,000?I didn’t come to Canada chasing money. I came because my daughter is here. The $25,000 would give me breathing room while I rebuild my life from zero, helping me stay close to her, cook for her, and slowly build the future I believe in. For the first time in my life, success is no longer just about restaurants. It’s about being present.
