My signature dish is corn agnolotti del plin, filled with sweet corn purée and crescenza cheese, finished with a light Parmesan spuma. Today at Sorella, where I am the Head Chef, a guest visiting San Francisco from New York came in hoping the corn pasta had returned to the menu (it’s not quite summer yet) so she could have it again. In that moment, I was reminded why I love to cook.
Who is your culinary inspiration?My biggest inspiration is my grandmother. She taught me that food is an act of love long before I understood technique. She had the power to make people happy through her cooking, and that’s exactly what I hope to do every time I step into the kitchen. That’s the kind of chef I want to be. Someone people remember not only for the food, but for how it made them feel.
What would you do with the $25,000?I want to make the world fall in love with pasta the way I did. With the $25,000, I would begin building my dream: a pasta-focused cooking show that highlights new talent and gives passionate chefs the opportunity to be seen, grow, and achieve their dreams. My goal is not only to grow my career, but to help others shine too.
