What is your signature dish?

My signature dish would have to be my French inspired curry mussels. I call it Vadouvan moules frites. I make a floral curry sauce and steam mussels in it, topped with crispy fries, roasted garlic aioli, shaved shallot and lime. It is always a crowd pleaser, even for those who don't like mussels OR curries!

Who is your culinary inspiration?

My culinary inspiration would probably be my mother. Growing up i was fortunate enough to have home cooked meals every single day. I also recall my mother going on a cooking retreat to learn classic French cuisine and high end cooking, so that she could take it back home and share it with us. We grew up eating three course meals from scratch, instead of things like packaged dinners and hot dogs.

What would you do with the $25,000?

I've had two dreams, one is to open a small speakeasy with a menu of elevated small bites. The other is to build an outdoor kitchen with all the toys, in order to cook outside with nature all year round. If I won, the money would go towards one of these dreams.
