Who is your culinary inspiration?Without a doubt my father, Steven Bidwell. He’s been an Executive Chef my entire life and growing up seeing the passion and work he put in to it has been an invaluable life lesson. Inspired an overdrive work ethic, a love of global cuisines and a constantly growing and unattainably high level bar to strive to achieve for myself. Because of him I put everything I have into my work so that I can make food that brings people together.
What would you do with the $25,000?I would take a portion to use towards a trip with my daughter, Emma, who lives half way across the country and we don’t get to see each other as much as we would like. The rest would go towards getting myself a brick and mortar shop open.
