Quarter-Finalist

Emily Encarnacion

I’ve wanted to open a cafe since I was a child. I’ve had this dream even before I realized I had any culinary talents. I’m ready to start.

What is your signature dish?

I honestly don’t have one signature dish. I love so many flavors that I will usually put my own spin on food. I love anything with rich deep flavors. Anything with garlic, rosemary, browned butter, and cheese. Basically the best parts of a charcuterie board into a dinner.

Who is your culinary inspiration?

I’ve always admired Anthony Bourdain. His love for travel, thirst for knowledge and authenticity through the lens of food was always so refreshing to see. He had a real and raw delivery with so much compassion and respect for a food’s culture. He cared about the history along with the people behind it. He definitely inspires me to travel and learn as much as I possibly can.

What would you do with the $25,000?

I would use the money to continue to build my personal brand. I want to open a cafe that’s centered around the community and good food. I also want to invest in my culinary knowledge, learning new and different techniques so I can expand my skillset.
