What is your signature dish?

I have a mahi mahi crudo with a what I call a coconut fennel sauce, fried garlic, a chili oil that is made from SAZON that I also make, pickled mustard seeds, raw red onion and fennel fronds

Who is your culinary inspiration?

My inspiration is the feeling you would get having dinner with your large extended family on a Sunday after spending the entire day together.

What would you do with the $25,000?

I would put the money towards opening my own not so big restaurant. I want my future place to feel like stepping into someone’s grandmothers house.
