There isn't one dish that defines my style or flavor profiles, rather every new technique I learn or new ingredient I encounter usually generates a dish based on thst technique or flavor, and all of those dishes build my "signature"
Who is your culinary inspiration?I've always been a giant fan of the unknown local heroes. The dive bar with the perfect burger, or a local Mexican joint with amazingly seasoned chicken. Those are the people I strive to mimic as a chef.
What would you do with the $25,000?No grand plans, but it would make daily living far more comfortable.
