I actually have two signature dishes: smoked brisket and wood-fired fajitas. The brisket is carefully trimmed, seasoned, and slow-smoked with patience and care, creating a peppery bark and melt-in-your-mouth tenderness. The fajitas are marinated, then cooked over open fire at high heat for bold, layered flavor. Both dishes have one thing in common: they make the room go silent, which is the ultimate compliment to any chef.

I honestly don’t have one culinary inspiration, other than those I cook for. I cook to express my care and love towards people, and that’s what pushes me to be better and to cook. Food is love, and it expresses so many emotions. My children and my wife inspire me to give them the best there is, and that’s what drives me to perfect my dishes.

My family and I are building our business, Halizo Trading Co., where we currently craft smoked salts and sugars. Our long-term goal is to grow into in-home catering and eventually a food truck. The $25,000 would help us take the next major step toward that vision. More than a business, it’s a family project that teaches our children the value of hard work, creativity, and building something meaningful while sharing great food and our story with others.
