Conch is a Caribbean favorite that is tenderized by pounding with a mallet, boiled or steamed to perfection, then simmered with aromatics and tropical provisions in a dark, brown roux. Conch soup is traditionally served on a bed of steamed white rice, but I have experimented with quinoa, barley, and risotto on the side, with great success. Conch is a very versatile protein and can be cooked as a steak, fritter, or as a lemon-cooked ceviche.
Who is your culinary inspiration?Of course, my mom. She was a professional woman who always made time on the weekends and holidays to prepare specialty meals and deserts. For many years while growing up, on Monday-Friday, mother's helpers would cook dinner for our family and I learned a few tricks from these lovely and diverse women as well.
What would you do with the $25,000?I would upgrade and remodel my kitchen with some of the $25,000 so that I can continue with my nutritious meal preparations at and from home. Donations to Union Rescue Mission for the prevention of food insecurity in Los Angeles' Skidrow is also a priority of mine. This prize may also be just enough to start a nonprofit since I am learning and understanding a great deal about nonprofit organizations, securing grants etc, all because of this worthwhile experience Favorite Chef is providing me.
