What is your signature dish?

I’m pretty versed in several cuisines but growing up on southern and Cajun taste. Coming up in the industry, I was classically trained in French cuisine. My signature dish would have to be a Cajun Chilean Seabass w/ Smoked Paprika Sous Vide Potatoes, Cilantro, Tomatoes, Radish, Orange and Lemon Juice w a saffron Cream Sauce.

Who is your culinary inspiration?

My Culinary Inspiration comes from the ever changing and evolving industry. New trends and very cool techniques to be taught. My family as well. We grew up with next to nothing. Taking the bare minimum and turning it into something everyone can enjoy. My kids LOVE the fact I’m a Chef. That keeps me going as well as my passion to know as much as I possibly can. Teaching and learning from the best.

What would you do with the $25,000?

I would get surgery my mom needs. Help to save my dog that needs surgery as well and secure the rest for my kids. I’d love to develop a non profit to teach girls to cook! It’s not enough if you ask me. My daughters give me that inspiration.
