Receive Text UpdatesMy signature dish would be my Brisket and Brie sandwich. Scratch made bread, dry rubbed smoked brisket, horseradish-Dijon mayo, caramelized onion jam, fresh Brie and my signature Cantonese BBQ sauce.
Who is your culinary inspiration?I grew up working in both my grandparents diners The Dinner Pail 1 & 2 as a young farm kid making everything from scratch from biscuits to pizza dough and sauces. Learning at an early age that quality of homemade products and comfort food was key to a happy customer so staying true to my roots as a chef I carry those values with me still to this day with all my creations.
What would you do with the $25,000?I took the leap last July and quit my 20 yr electrician job to turn my dream to reality running my food trailer and catering. We are currently looking to build a property for and event center for a catering venue and second chance cooking school with the "teach a man to fish" mentality to pass on my knowledge and help people walk a new path in life.
