Vegetarian moussaka. Layers of potato, red onion, eggplant and zucchini - all baked layer after layer atop each other, topped with a mixed pepper and mushroom ragu, and a bechamel.

Who is your culinary inspiration?

My mom and Jamie Oliver.

Open a date-night cafe serving gourmet vegetarian meals.
