What is your signature dish?

My inspiration comes from comfort food. I love to put my spin on dishes I grew up with. For example, Chicken Cordon bleu. My version gets its Blue Ribbon status with smoked gouda served on a honey mustard, roasted jalapeño and cilantro sauce. My style is simple & fresh ingredients with enfaces on the sauce, I love to create balanced dishes with acid, heat, sweet, fat and texture.

Jon Bonell, Dale Wampstad, Dean Fearing, Anne Burrell, Ina Garten, Bobby Flay

What would you do with the $25,000?

I would spend the money upgrading my restaurant and continue serving wonderful food!
