I’m honestly not sure if I have a signature dish, every guest I have served loved different meals for different reasons. There was never just one. My main concept is to use simple ingredients or leftovers, transforming into a restaurant grade dish no one thought was possible. I cook what I feel, everyday is different. My signature dish is “ In That Moment “. Using what’s in season and what I have on hand. I let nothing goes to waste
Who is your culinary inspiration?There are 2, my Father and my Uncle ( aka Father 2.0 ) two different types of cooking techniques, different backgrounds, different visions. My father was the home cook with no culinary school background but he was good at making delicious food from whatever he could find in the house. As for my uncle he showed me the fine dining way of cooking. From execution to presentation, allowing me to present the food we cooked to the guest at the table. Taking pride into my work.
What would you do with the $25,000?If I win the prize, I will finally buy my food truck. That’s something I’ve been working on for a while now, this would definitely be a big help
