What is your signature dish?

When my sons were little I came up with a dish called Chicken à la Daddy. It’s a sort of rolled chicken Florentine/Cordon Bleu hybrid.

Who is your culinary inspiration?

I’d have to say my mother-in-law. My wife’s family grew up with very little. She found ways to inspire them with delicious food. There was always a green vegetable on the table. Can you imagine my wife, in 1972, begging for Brussels sprouts for her birthday dinner?

What would you do with the $25,000?

My friends and I have a competitive dinner club. Someone picks a theme, usually a quote or a phrase, like “the game is afoot”, and we all have to make the most luxurious and delicious dish that fits the theme. I think I would use the money to make a cookbook of some of the menus from previous competitions.
