It’s incredibly versatile: I use it for curries, pasta, pizza sauce, and even as a dip with chips. I always make big batches because it’s fridge-friendly and perfect for busy days. Everyone around me loves it, and it has truly become a staple in my kitchen.
Who is your culinary inspiration?My culinary inspiration isn’t just one person — it’s the women I grew up around in my Gujarati Indian household. I was raised believing food is love, and we even have a saying that the way to someone’s heart is through their belly. My grandma, mom, and aunts showed me that every single day through their cooking and hospitality. I grew up embracing the beautiful culture of “Atithi Devo Bhava” — treating guests like God — and that made me fall deeply
What would you do with the $25,000?I grew up dreaming of opening my own restaurant — a place where flavor, love, and hospitality matter more than the price tag. I want to create a space where people feel welcomed, cared for, and leave with full hearts and full stomachs. This $25,000 would become the seed money toward the dream 5-year-old Darshita once had, and the future I’m still working hard to build today.
