What is your signature dish?

My signature dish is Malloreddus alla Campidanese, a traditional pasta from the area of Sardinia where I was born. It’s the dish that represents my roots, my family, and my childhood. I reinterpret it in a modern way while keeping its soul alive: handmade malloreddus, deep saffron flavors, rich sauce, and the warmth of a true Sardinian table. It’s rustic, emotional, elegant, and full of personality, just like my cooking.

Who is your culinary inspiration?

Nature inspires me more than celebrity chefs. I grew up in Sardinia surrounded by the sea, farms, fishermen, fire, animals, and long family lunches full of noise and laughter. My inspiration comes from real life: fishermen respecting the ocean, grandmothers making pasta by hand, and people turning simple ingredients into unforgettable moments. I cook with Mediterranean energy, instinct, emotion, and soul.

What would you do with the $25,000?

I would invest the $25,000 into opening my dream concept: an Italian omakase experience inspired by Sardinia and modern author cuisine. An intimate chef’s counter where every course tells a story through handmade pasta, seafood, fire, wine, and seasonal ingredients. I want to create something emotional, fun, theatrical, and deeply Italian, where guests don’t just eat, they experience my world and personality through food.
