What is your signature dish?

My signature dish is a butter basted Kangaroo tenderloin with duchess potatoes and a raspberry orange reduction.

Who is your culinary inspiration?

My inspiration is Anthony Bourdain. The philosophy of the kitchen is a different animal that takes a special personality to truly handle is something I think about often.

What would you do with the $25,000?

I would use the money primarily on my staff. I would freshen up their gear and take them to eat at places they never thought they would to experience something new.
