What is your signature dish?

My signature dish is blackened land raised sustainable Atlantic Salmon, grilled asparagus w/ wild mushroom rice. My secret ingredient is love. Love is the one ingredient that sets a dish a notch above the rest.

Who is your culinary inspiration?

My current culinary inspiration is Chef Mark Brand and my life long inspiration is Chef Gordon Ramsay.

What would you do with the $25,000?

With the $25,000 I would kickstart a social enterprise restaurant where I would employ the unemployable and teach life skills while offering employment to the disadvantaged to help me feed the disadvantaged in my hometown and beyond. Just like chef Mark Brand is doing currently. The more people fighting the battle of food insecurity and looking for alternative routes the better. "Give a person a fish, they can eat for a day. Teach a person to fish, they can eat for the rest of their life.
