What is your signature dish?

My signature dish? Anything with cheese sauce. I have a love for sodium citrate. It makes cheese melt like a candle, even cheese that don't melt...like feta. Ill drizzle that feta sauce over flaky earthy spanakopita pinwheels for a beautiful vegetarian appetizer!

Who is your culinary inspiration?

If it's a food personality, Id have to say Alton Brown. But in reality the start is earlier than that. Mom, dad, and my grandparents. My grandparents were farmers and I helped with the house garden and grandma would cook what we picked. That way of food was caried on to my parents, who even though not farmers professionally, carried on the way of life. I grew up on hot homemade meals, pies in the windowsill, jars of homemade jam, tomatoes we canned, and mountains of cookies at Christmas.

What would you do with the $25,000?

It would be a great down-payment on an idea I've had for a while. Id like to recreate how I experienced food as a kid in farm country. It comes in four parts. 'Ground' would be a teaching farm, farm market, & B&B. And 'The Barn' a wedding venue. 'Glass' is a somewhat upscale molecular restaurant on-site getting as much as I can from 'Ground' and offering cooking classes. Last is 'The Horn & Antler'. A hunt lodge style gastropub, brewery, & meadery serving steaks, game, and fish.
