Receive Text UpdatesCarnitas with chile verde is the dish that brings everyone around me together, no matter what. I have a process, not a recipe and endlessly tweak the little things. I love the versatility. This dish can transform into enchiladas, street tacos or a rice bowl. There are times when we savor tasting it along the way as much as sitting down together for the end result.
Who is your culinary inspiration?There is no denying that my mom inspired my love of cooking. I think of her every time I am in the kitchen. She had a way of turning any dish into a feast. We shared a love for Emeril Lagasse and his show. Emeril’s gumbo is still one of my favorite dishes to make today. Years ago, I went to New Orleans with my parents. I still recall every delicious dish we shared at Emeril’s original restaurant. I was barely 20 years old and even then, I looked forward to recreating those flavors at
What would you do with the $25,000?My thoughts on this question have recently changed. My father just passed on May 15. My wife and I have always dreamed about taking our family to Ireland & Scotland to celebrate our heritage and 50th birthdays. My dad was very proud to call himself a Scotsman and I would love to honor him by actually taking the trip.
