Receive Text UpdatesMy signature dish is Beef tartar with " French onion Dip" and potato chips. I season the beef with onion salt, olive oil and picked onion. Then I make a French onion type sauce with mayo, sour cream and cooked shallot. Then I make potato chips and finish the whole dish with toasted leek powder.
Who is your culinary inspiration?Michael Mina. I thought the trio style of dishes was such a cool concept and I have worked a similar thought process in the construction of my dishes in order to create a vibrant and flavour full dish with only a few ingredients.
What would you do with the $25,000?I want to start a small business selling somewhat sophisticated ice cream sandwiches and popsicles, ideally from a bike with a freezer attached, and possibly get them into a retail environment if it does well.
