What is your signature dish?

Carnival pasta paired with a Tamarind fried King fish. Spicy roasted cumin Alfredo, simmered with red, green and yellow pimento peppers, cherry tomatoes. Paired with bucatini pasta. Garnished with mango kuchela. Breaded fried king fish steak, seared in a sweeten spicy Tamarind sauce.

Who is your culinary inspiration?

I don't have a person specifically, but love exploring the happiness stored in the fusions of the foods of Trinidad and Tobago where I was born.

What would you do with the $25,000?

I would Invest in a food truck.
