What is your signature dish?

My signature dish is named the San Andreas; it is a deconstructed California roll. King crab confit in clarified butter, Avocado foam, pulverized rice cracker, nori dust and cucumber sun onion relish. Garnished with dehydrated ginger and wasabi aioli.

Who is your culinary inspiration?

My culinary inspirations are my grandmothers. Both taught me how to cook and the memories of their comfort foods keep me inspired to find new methods and ingredients to provide those same nostalgic flavors and feeling

What would you do with the $25,000?

With $25,000 I would invest in a lease on a rental commercial kitchen and start my catering business. That money would help my entrepreneurial ventures in a tremendous way
