Receive Text UpdatesThe top selling entree at my restaurant was a bourbon, garlic and brown sugar marinated hanger steak with garlic mashed potatoes and sautéed haricot vert but my award-winning New England style haddock chowder was a regular staple on the menu and a crowd pleaser. My favorite to create is Osso Buco with Milanese risotto.
Who is your culinary inspiration?One of my first jobs was working at a private dinning club as a valet. I would always miss the shift meal because I was busy parking the arriving customers’ cars. After all the guests were received, I would make my way back to the kitchen and the two Mexican chefs, Juan and Jesus would feed me exotics like frog legs, calves tongue, sweetbreads, organ meats etc. attempting to get a reaction from me when they told me what I had eaten. I loved it and that was when I fell in love with food.
What would you do with the $25,000?Travel to culinary rich destinations (e.g. Italy, Korea and Thailand) to diversify my palate and enrich my knowledge of foods and cultures. I would also use some of the winnings to support local charities that address food deficiencies in the community.
