This is the stupidest question to ask a chef. There is no signature dish and we hate this question.
Who is your culinary inspiration?Oh man, there are so many. My father is an amazing baker, my cooking partners over the years, Jose Andres, The Grande Dame Julia, Batali even though he’s been cancelled, but my inspiration mainly comes from the people I feed. My favorite moment is when the food has been served and I fine an unobtrusive place to just watch people enjoying the food and each other.
What would you do with the $25,000?Probably pay some bills. It’s not about the Benjamin’s for me, it’s about food and the human connections it creates.
