I would say I have 2 signature dishes. The first is my street corn chicken rice bowl. I made it as a special for my food trailer and my customers loved it so much, I was unable to get rid of it from the menu. My personal signature dish for catering and private events is braised beef short ribs with roasted root veg, mashed potatoes with a red wine sauce.
Who is your culinary inspiration?Gordon Ramsey is definitively my celebrity culinary inspiration. I could watch any of his shows and videos and I always end up learning something new or just a different approach to something I have done for years. My personal culinary inspiration is Chef Janet from Bethany's Table in Oregon. She taught me so much right out of culinary school. She travels the world and is able to recreate dishes with a little research the right technique and flavor profile. I always look up to both of them.
What would you do with the $25,000?I would use it to either upgrade my kitchen space with a vent hood/circulation system or I would use it towards updating my food trailer. I am able to manage with both, but they both need serious upgrades as they are small and out of date.
