My signature dish would be a Jerk hamachi collar Served ontop of a cabbage, jalapeño, red onion, cilantro oil, spicy vinegar and cherry tomato salad, topped with lightly salted plantain chips.
Who is your culinary inspiration?My culinary inspiration is my mother, grandmother and eldest brothers. They all taught me how to do anything and everything I needed to know. My grandparents restaurant (when it was open and my grandmother was still with us) was a neighbourhood favourite and I miss it almost everyday.
What would you do with the $25,000?I would try and open my own private catering company with my brothers who are also chefs. None of us work together anymore and this would be my way to bring the family back into the same kitchen and remember what it was like growing up in our grandparents restaurant.
