Receive Text UpdatesMy signature dish would have to be green chicken Pozole. I didn’t like traditional Pozole. I never made pozole. So I taught myself till I got recipe right. I started with the green chili. 1 chili & tomatillo spices chicken too thin no color & flavor. 2 time I adjusted same for 3rd. The 4th time was when I used 3 different chilies more tomatillos & different spices. I cooked the chicken differently using spices & vegetables making a stock. Reducing it Putting it altogether.
Who is your culinary inspiration?I have a few Chef Alton Brown & Rick Bayless. I what I love about these Chefs is they always tell you history. They tell you where it comes from. How it grown. What other things you can do with it. What you shouldn’t do with it. In school I was told the difference between a good cook and a great cook is that a great cook can tell you the history and the whys behind the process. When I work on recipes I look up history know the whys behind the process. I try to be the one of the great
What would you do with the $25,000?This question has a different answer at different times of my life. If I was asked this at the end of last year. I would have said a vacation, saving and bills. Today, I have my oldest daughter graduating from high schools this June going to Cal Poly Pomona this Summer. For my family she is the first one graduating from a high school to go to a Cal State University. So I feel that she work hard for that she deserves it. So if I were to win the $25,000 I will give it to her for school.
