What is your signature dish?

My signature dish is my lasagna. My mother entrusted me with the recipe that was passed to her from three generations. Each one added a special touch to the recipe. It carries memories, traditions and timed shared with special touches that bring our family together. When I see someone take that first bite. I see the eyes close and smile began and a connection made; they know the dish was prepared from the heart with love and history. It reminds me of times my mom and I cooked together.

Who is your culinary inspiration?

The women in my family were my inspiration. Grandmother would prepare meals for the family and reunions; sharing the history of the dish while gospels played in the background. My mother and aunts would collaborate on dishes. I would observe the process; the cleaning, prep and seasoning. They had my full attention. Some recipes were altered because of financial restrictions; they showed me how to improvise and how altered ingredients add a unique flavor. Your dish is always a reflection of you.

What would you do with the $25,000?

It has always been my dream to be a chef and own my destiny. I would have my own food truck and take chef lessons to enhance my cooking. I would start with a limited menu that would expand with the patrons. Any food left would be distributed to future patrons and the homeless. I would have a catering component where the flavors I create can reach more people. It would be a family business where my siblings, nieces and nephews can help from time to time; as my mother and her siblings would.
