What is your signature dish?

New Orleans cajun crawfish bisque

Who is your culinary inspiration?

My culinary inspiration comes from my parents. They were both born and raised in New Orleans and great cooks. I combine both their styles in my cooking. My father cooked exquisite foods using all sorts of spices like lamb chops, veal, duck etc. My mother cooked more southern comfort foods like gumbo, catfish, red beans using mainly fresh chopped seasonings but not a lot of spice. I add some of my father and some of my mother is every pot.

What would you do with the $25,000?

If I win $25,000.00 I would use some to purchase a food truck so I can showcase my food in different places. I would also donate some to a non-profit in Georgia that helped me greatly when I was displaced after hurricane Katrina.
