Who is your culinary inspiration?I am inspired by dishes that are loaded with a variety of flavors but fairly simple to execute. My "Monkfish Velouté de Crème" for example is Fresh Wild Caught Monkfish Medallions/Rotini/Roasted Garlic/Wilted Spinach/Grape Tomatoes/Artichoke Hearts/White Wine Cream Sauce/Integrated Roasted Tomato & Red Pepper Pesto all just thrown into a pan. I love Mediterranean flavors for freshness and simplicity.
What would you do with the $25,000?We just had to replace the rooftop unit on our building to the tune of $20,000. I would probably want to pay off that loan to free up some monthly income and the rest to take my wife somewhere nice to relax and unwind for a week with champagne and snorkeling.
