Super Duck Three Way | Smoked duck breast, duck leg confit, duck prosciutto, herbed aioli, smoky tangy bbq sauce on a toast brioche bun. There is a sandwich in the North Shore area called the "Super Beef Three Way" and this was my answer to that nonsense.
Who is your culinary inspiration?I would have to say the people who come in on a regular basis that are ALWAYS interested in what the specials are. A few will even give a dish a try even if it's something they had a less-than-stellar experience with in the past and are delightfully surprised. THAT is inspiring.
What would you do with the $25,000?We just had to replace the rooftop unit on our building to the tune of $20,000. I would probably want to pay off that loan to free up some monthly income and the rest to take my wife somewhere nice to relax and unwind for a week with champagne and snorkeling.
