What is your signature dish?

It varies, to be honest. If I am using my smoker, I've been told my smoked meat (brisket, beef ribs, pork shoulder) are a real hit and have sold it many times. In the kitchen, creating Latin infused food such as; birria, al 'pastor enchiladas. Middle Eastern cuisine, I would say chicken schwarmas. BBQ, would definitely say Jerk Chicken and Pork and/or steaks on an open fire.

Who is your culinary inspiration?

My parents, growing up I always enjoyed watching them cooking West Indian and Chinese fusion dishes from being of mixed ethnicities and turning random ingredients into succulent dishes. I've always enjoyed cooking and constantly attempting to recreate authentic global regional dishes.

What would you do with the $25,000?

I would use the $25,000 to open a food truck and/or establish my catering business and transforming my kitchen to run my catering out of my house.
