I’m Puerto rican so I stick to my roots with my signature dish Arroz con Gandules y Pollo Guisado (rice with pegion peas and stewed chicken). Of course substitution for the rice.

What would you do with the $25,000?GO to Disney! NOT!!!! lol. <- insert humor… seriously I would like to further look into investing in a meal prep program/business targeting lower income/fixed income populations that are not able to manage diabetes with food/meds due to either no resource, inability to cook on their own or simply not knowing how and what to use as safe substitutes without sacrificing flavor.
