Receive Text UpdatesI have many go-to dishes that I have created, but the one that I feel has been the most successful dish in my career would be: celery root and fennel croquette, served over a black garlic emulsion, and topped with a blonde frisee salad that was dressed with a fermented horseradish vinaigrette, and garnished with smoked trout row and everything bagel seasoning

What would you do with the $25,000?I own a catering company that has off and on business, and it is limited to my hometown. We set ourselves apart by working with our clients to build their dream menu. I would take the 25k and invest it into equipment and training for my team to build a catering empire based around the city that I live in
