Who or what inspires you to cook?

True food security, encouraging connection to ourselves and to nature, and my rich family lineage of connecting to community and story through food, are what inspire and drive me to serve as a foraging Chef.

What's your all time favorite dish to make?

Collecting food from nature and creating inspiring and nutritious dishes are what keeps me going. Like foraging seafood is my all time favourite - Rock fish, crab, mussels, periwinkles, limpets, seaweeds. Coming back to shore to cook it all on fire. Using what I find on the beach; rocks, driftwood, I steam and stew what I have harvested with tomatoes, potatoes, saffron, garlic and wild fennel. Some sourdough cooked over the fire, with sauce Rouille. A true West Coast Bouillabaisse!

What would you do with the $25,000?

I would invest in my vision of connecting humanity back to their roots through what we consume. Wild culinary arts, foraging and kitchen processing workshops, and a mobile kitchen trailer to bring wild-foraged Nature to your doorstep.
