I grew up poor and always had to make something out of nothing literally! My nieces and nephews would all come ask me to cook on the weekends when I was at my moms house and I would whip up some concoction and they all loved everything I made and always said I was the best cook in the family! Never wanted to work in anyone else's restaurant so my wife and I started a fair food pop up and now we cater for schools as well as private parties! I think Guy Fieri is my biggest inspiration!

My wife calls them Sloppy Scotties, I take a ball tip slice it thin and massage in baking soda and water to tenderize then add my spices and thin sliced red onion and red bell peppers and grill them up to a golden brown color drain all the fat and add the BBQ sauce and I use a hoagie bun that I put garlic butter on with pepper jack cheese and toast it then slap the meat on it with more cheese and melt the cheese with a torch and that's a Sloppy Scottie. Simple but delicious
