The smiles and compliments from returning guests, the joy and pride of sharing my Austrian dishes with customers and friends, the work ethic and dedication of my team, and the boundless energy and creativity of young chefs--these are the things that keep my passion alive!
What's your all time favorite dish to make?It's a tie--my Viennese Chicken Schnitzel and my Austrian Apfelstrudel (Apple Strudel). The schnitzel's simple perfection: crispy breading, tender meat, squeeze of lemon, pinch of salt, paired with my tangy buttermilk ranch dressing keep my customers returning. My apfelstrudel is equally loved, with spiced apple filling, flaky pastry and served with house-made schlag (whipped cream).
What would you do with the $25,000?I would launch a paid internship for culinary students from our local college, aiming to provide the opportunity to bridge the gap between the classroom and fast-paced restaurant operations. I love to mentor young talent, not just in cooking, technique, plating and speed, but also in the business and operations of a restaurant. I enjoy mentoring the next generation of restauranteurs so they also have the tools for success, we need them to keep the industry going!
