I worked as a lead cook on the Towboats for 10 years, learning different cultures and incorporating them into my menus. Growing up on a farm and being the oldest kid I didn’t get to make cookies or prepare the meal for the farm hands cause I was out in the fields. What's your all time favorite dish to make?Salmon patties,Greens, Fried potatoes and onions, Cole slaw, Cornbread, Southern Banana Pudding Glass of sweet tea….. braised thick cut pork chops, glazed with mango chutney, served with garlic roasted red baby potatoes, seared asparagus, yeast roll with honey butter.
What would you do with the $25,000?Since leaving the river, I often dream of owning a “Soul Food Truck” . Offering traditional southern, Cajun and country style dishes. Of course a couple desserts and Sweet Tea, Lemonade.
