What inspires me to cook is the bounty of local ingredients surrounding our location. We have some of the best farms, fisherman, and Bayman providing and harvesting the local bounty of eastern Long Island. It’s also inspiring to be surrounded by many world class vineyards on the North Fork. The local wine and food pairing is a fantastic natural inspiration.
What's your all time favorite dish to make?My all-time favorite dish to make is Nepali style chicken curry, usually with steamed long grain basmati rice. We cook this at home with my wife and for family. It is inspired by recipes taught to her by her mom and made with love. I just love the flavors and it’s something that I don’t serve at the restaurant so it’s always exciting to make and eat. What would you do with the $25,000?We hope to use the award as a reinvestment in our business. It has always been our goal to employe as many LOCAL staff members as possible. We also aim keep our team employed as long as possible, many have been with us close to 15 years. This award would let us do a few upgrades to some very well loved kitchen equipment as well as some updates to our dining room. We look forward to continuing to serve our community.
