Who or what inspires you to cook?

I have been inspired by many people, from learning to cook eggs with my mother, going to the farm and buying goose eggs with my father. Picking fresh vegetables from the garden with my grandparents for dinner, or eating a ham and cheese sandwich on the beach with them. These experiences growing up helped shape me as a person and chef; though simple at the time, looking back, it was so important. Cooking is an expression of our inner being; every dish reflects our soul's journey and desires.

What's your all time favorite dish to make?

My favorite dish is Slow Roasted Prime Rib with a caramelized onion crust, served alongside a classic Bordelaise sauce and some horseradish cream on the side, served with 50/50 Robuchon-style pommes purée topped with chives and shaved white truffle. This dish represents a part of my childhood, something my mom makes for holidays. She doesn't make it as described. Being a chef, I've redeveloped it, replacing the French onion soup packet for the crust, etc, to my own version over time.

What would you do with the $25,000?

I would use the funds to expand our “Find Your Focus” program, continuing to teach, inspire, and positively impact culinary students and foodservice professionals in the food industry through education and creativity. This investment would help more people discover their potential in the culinary world.
