My biggest inspiration to cook comes from my family and my love for bringing people together through food. Cooking started as a way to care for my loved ones, especially when my aunt got sick—I saw firsthand how a home-cooked meal could provide comfort and nourishment. My all-time favorite Mexican dish to make is enchiladas! 🌮🔥 There’s something about the rich, flavorful sauce, the soft-yet-slightly-crispy tortillas, and the perfect cheesy melt that makes enchiladas a go-to comfort food. Whether it's classic red enchiladas (enchiladas rojas), creamy green salsa verde enchiladas, or spicy chipotle chicken enchiladas, I love making them from scratch and layering the flavors just right.
