Who or what inspires you to cook?

I love to feed people good food. When someone is completely satisfied with what they are eating it is special. I would feed people for free if I could afford it. Food is the fuel of life.

What's your all time favorite dish to make?

I go through stages. Currently my signature is my High Vibe Quiche. A 3 inch tall quiche with a pate brise crust. Everything is from scratch. I make different flavors a daily quiche flavor. The classics are always good. It seems that the more off the wall flavors like Andouille Potato Gratin, Squash Casserole, Blackened Shrimp Alfredo, & Truffle Mac & Cheese seem to be the best ones.

What would you do with the $25,000?

I would pay off my back rent to my landlord so I could get a clean slate for my second year in business.
