Who or what inspires you to cook?

I was inspired to cook at a very young age, watching Julia Childs, The Galloping Gourmet, Yan can cook,..etc. I cooked for family & friends often and did most of the Holiday cooking for 20+ people. I am an avid fisherman and hunter and began specializing in creative dishes and presentations of fish & game foods. I was given the opportunity to work with an Executive Chef in NJ part time to gain restaurant experience. I am always looking for creative ways to prepare my dishes.

What's your all time favorite dish to make?

My favorite dish is hard to decide on. I guess it would be a wood fired venison loin over a fresh herb, roasted pepper & black truffle risotto made with my own venison bone broth. Or, a grilled monkfish over white beans and escarole. Fish is served on olive oil toast on top of the beans & escarole with a lemon infused olive oil.

What would you do with the $25,000?

I would like to start a business, perhaps a food truck or restaurant specializing in fish & game dishes. I would like to make people aware of the health benefits of fresh fish & game.
