People who've had strokes regained brain function, people with heart attacks are now power walkers, and yes, even people diagnosed with cancer are living lives they love. And I get to do that every day! As a doctor & foodie enthusiast, it fills my heart every time I’m able to serve delicious foods that change people’s biochemistry & helps them to repair.
What's your all time favorite dish to make?I love turning hedonistic comfort foods into irresistible dishes that build the body up, rather than break it down. Cajun quinoa pasta mac & cheese is one of my favorites. Grass-fed beef ribeye in coconut amino and Caribbean marinade with lacinato kale and grilled asparagus, or mushroom noodle stir fry with bok choy, kale, waterchestnuts, bamboo shoots and garlic in a gluten free vegan fish sauce. And of course, let's not forget grilled shrimp tacos on almond flour tortillas - SO good!
What would you do with the $25,000?We have a nonprofit called Food & Social Science Institute, and we would use the money to give back to those who have given us the most: our US Veterans. Many Veterans do not have access to fresh food and produce, and many more have serious health concerns, including heart disease and anxiety. We would give them education, kitchen supplies, and prepaid debit cards they could use at their local grocery stores and farmer’s markets to purchase foods that will help them to THRIVE!
