What's your all time favorite dish to make?Brisket is my all-time favorite dish to make. There’s an art to low and slow BBQ—seasoning it just right, tending the fire, and patiently waiting for that perfect bark and tender bite. Every brisket is a challenge, but when it’s done right, it’s magic. It’s more than just cooking—it’s about tradition, technique, and the joy of sharing a perfectly smoked brisket with family and friends.
What would you do with the $25,000?I’d use the $25,000 for a food inspiration tour focused on live-fire cooking. Cooking over fire is primal—it’s at the heart of who we are. Exploring global open-fire techniques would elevate my craft and inspire new ways to bring bold flavors to the table. I’m also fascinated by steam cooking in Iceland using geothermal heat, a method that feels both ancient and cutting-edge. This journey would fuel my creativity and shape the future of my barbecue.
