My family. Growing up food was the center of everything. My grandmother use to cook for all of us and my cousins would come over with aunts and uncles. When holidays came around they were always focused on 2 things, family and food. Thats what keeps me going in this industry. Teaching the new chefs coming up and sharing the joy of food with them. To me if you're eating with me or sharing a recipe that makes you family, and to me family is everything.

One of my favorite dishes that I truly enjoy a making is a ran seared Rib-eye with a pancetta blue cheese cream sauce, roasted Brussels with bacon, and parm truffle fries. I always show my students this meal before they graduate because it shows them the butchering side to it and they have fun with the plating. Also who doesn't love pancetta with their steaks?

The first thing would be taking my beautiful little girl to a Disney cruise! I never been on a cruise and i always thought it looked fun what better way to enjoy it then with my wife and daughter. The 2nd thing I would do is I would donate some of the winnings and create a scholar ship for students for our culinary school. So I teach where I went to culinary school and it was something I always thought would be amazing to do.
