Who or what inspires you to cook?

I get inspiration from daily recipes sent from various online magazines. Bob Appetite and sunset are examples. I never copy the recipe verbatim but if I see an opportunity for me to put my own stamp on it I’ll send it to myself via text.

What's your all time favorite dish to make?

My last favorite dish was Pastelon with mushroom puree. My version of it wasn’t perfect but it tasted wonderful and I would love to standardize my version at some point down the road.

What would you do with the $25,000?

I would use the money to get going with my concept ghost kitchen. I would start by standardizing a few dozen recipes for the kitchen to rotate in for a first year’s job. Also I would like to learn more about how to keep books for myself.
